Epicerie Boulud's tiny Yuzu Meringue Tart ($6) is not only beautiful, but it also strikes the perfect balance between sweet and tart flavors. The yuzu curd filling is a relative of a classic tart citron, but its flavor and aroma are closer to grapefruit than lemon.
The inside of the tart is split evenly between a light colored, somewhat thick, curd filling and a fluffy meringue cap. The dozen or so tiny kisses of meringue are torched and browned on top. The shell, as with all tarts from Epicerie Boulud, is also perfect, with a well baked crumb that's firm but then crumbles with ease upon your first bite. Four tiny gelée discs flavored with very tart yuzu round out the pastry.
