In 2011, Cafe China brought Art Deco Chinese to Midtown, mixing Sichuan cuisine with a roaring, early 20th century vibe. Late last year, the team behind it expanded to a new location in Tribeca. The new restaurant, China Blue, is a palatial space focusing on the cuisine of Shanghai, trading in Sichuan peppercorns for sweet and sour flavors, soup dumplings, and lots of seafood.
I recently spent some time in the kitchen at China Blue checking out some of the dishes they offer. See what happens behind the scenes in the slideshow above.
