Over the decade he worked in restaurant kitchens, Peter Shelsky had many ideas for starting his own business, but when he mentioned to friends and family that he was thinking of opening an Jewish appetizing store in Brooklyn, the answer was unanimous: do it!
Since June of 2011, Shelsky's has been saving Brooklynites the schlep to Manhattan for their lox fix, along with herring, whitefish, and all sorts of other smoked and pickled food.
Shelsky's carries the Jewish appetizing staples as well as some creative updates like kung pao salmon which is cured like gravlax but with Sichuan peppercorns and chili bean paste.
I spent some time with Peter and his team behind the counter to see them at work. Take a look at the slideshow above for a look at their fish operation and how they make their specialty salads and sandwiches.
