Aaron Franklin Drops a Brisket Bomb at Hill Country's 'Pop-Up Joint'

Just a few days before the 11th annual Big Apple Barbecue, Aaron Franklin of Franklin Barbecue dropped by the Flatiron's Hill Country for a one-night taste of his crazy-delicious smoked meat.
The four-year-old restaurant was just named the best barbecue joint in Texas "the world" by barbecue editor Daniel Vaughn and Texas Monthly (subscription required for full article), and we can see the case for why. The magazine co-sponsored the night with Foody Direct, an online specialty food delivery that partners with select restaurants and businesses across the country. While they don't sell Franklin's barbecue, they do offer 'cue from three other Texas spots on Texas Monthly's top 50 list: Black's, Snow's, and Kreuz.

As valiant as some of New York's recent barbecue efforts have been, Franklin's blows them all out of the water. He started his gorgeously moist brisket, fall-apart tender beef and pork ribs, and snappy sausage in Hill Country's kitchen the night before, then sliced them all for each 'cue fan in line, just like back home in Austin.
