I firmly believe that the best cheese sandwiches are melty cheese sandwiches; it stands to reason that an even melt-ier cheese sandwich should be the best of all. That's why slathering pimento cheese on a sandwich is such a brilliant idea. At Van Horn Sandwich Shop on Court Street in Cobble Hill, it makes an appearance on the "BLP" ($10): bacon, lettuce, and pimento cheese. The idea is great, but the execution is better. It's got the buttery golden surface of the best grilled sandwiches, with an ample amount of smoky thick-cut bacon, lettuce for a crunch, and a blanket of pepper-spiked, slightly garlicky, tangy pimento. Sounds like excess, but a little hot sauce or vinegar, both stationed on your table, cuts the richness admirably.
