When the seasons change or a holiday is approaching, you can count on Dominique Ansel to debut some beautiful new creations for his bakery. You can also bet that there will be at least one specialty religieuse that's artfully decorated to match the occasion. For Easter, there's the Bunny Religieuse ($6.50).
This classic two-layer,choux pastry features a light milk chocolate pastry cream with nougat chips inside that add some welcome texture. The filling is a tribute to the foil-wrapped Cadbury cream egg—the choux pastry filling is milk chocolate rather than white fondant and is much less sweet, but the slightly runny texture is similar.
As with all of Ansel's seasonal religieuses, whimsical touches make it special, in this case handmade white chocolate bunny ears, a button nose, and a tiny pink tail. It's available through Easter Sunday, March 31.
