Sunshine Co. is a recent addition to the restaurants and cafes popping up on Washington Avenue in Prospect Heights. It's a little corner restaurant that serves brunch, lunch, and dinner, and it has stylish decor as well as gorgeous light pouring in through their defused windows.
Among their simple lunch menu is the savory Grilled Cheese ($9.00; add bacon for $2). It's melted Swiss topped with pickled shallots and mustard seeds between thick slices of buttery griddled white bread. The pickle on the shallots is subtle, just enough tangy enough to cut through the buttery cheese; mustard seeds add an unexpected spice I hadn't realized I craved. To boot, the sandwich comes with a generous side of thinly sliced sweet potato crisps.
