Tips and tricks for making the best sandwiches at home.
Cauliflower sandwiches are a tricky sell, but the one on Animals' menu was hard to resist: curried cauliflower in large chunks, walnut paté, pickled onions, frisée, cucumber, mint and hot sauce (mayo made with puréed cauliflower).
Like its Pulled Bacon counterpart, this sandwich is dominated by a chewy baguette that struggles to hold its fillings. But bready issues aside, the mild flavor of the cauliflower takes well to the curry spices, a subtle sweetness that balances out the nutty paté and slightly tangy onions. With cool mint and cucumber, and creamy mayo, this is a surprisingly complex vegetarian sandwich that delivers on its promises. At $10, it's on the smaller side, but you could always ask for extra animal crackers if it's just not enough.
