Tips and tricks for making the best sandwiches at home.
The Cajun Catfish Po' Boy ($10.95) at Chat n' Chew is less New Orleans staple than it is fried fish sandwich. It has lettuce and tomato, but had we opted to have the fish grilled, the resulting "po' boy" would have left us scratching our heads. A soft, chewy ciabatta replaces the traditional baguette-like po' boy bread, and it works, and well, but it doesn't quite deliver the textural contrast or the French influence that defines the Crescent City's favorite sandwich.
The catfish is lightly breaded and quickly fried, so it retains its moisture and finds balance in a healthy dose of smoky, salty, Old Bay tartar sauce. There are no pickles on this po' boy, but the cold freshly shredded iceberg offers all the crunch this tasty Cajun catfish sandwich needs.
