M Noodle Shop in Williamsburg has some great vegetarian soups, but one of the best is the simple Mixed Vegetable Noodle Soup. Crisp fresh veggies, chewy noodles, and a flavorful broth all add up to a fantastic bowl of soup.
Vegetarian Borscht At Veselka
Ukranian diner Veselka has a bevy of vegetarian soups on the menu, including a cold vegetarian borscht. It somehow manages to be light and refreshing, but also rich and satisfying, in part because it's garnished with diced cucumbers and a sliced hard-boiled egg.

Stone Park Cafe is one of Park Slope's best restaurants. Their menu changes daily based on what's in season, so keep an eye out for this luscious butternut squash soup. It's made even richer by a garnish of creme fraiche and a tiny, perfect raviolo.
Vegetarian Posole At Enid's
Enid's in Greenpoint is a low-key bar that serves Southern-inspired food. If they have the vegetarian posole as one of their daily specials, you'd better order it. Chewy hominy swims in tangy, savory green tomatillo broth, and is topped with crispy tortilla strips for a textural contrast.
Duk Man Doo Gook At Kofoo
Kofoo, the Korean takeout place near Madison Square Garden, has a delicious vegetarian soup. The huge container is packed full of crisp vegetables, chewy rice cakes, plump vegetable dumplings, and pieces of a shredded omelet.
Dovga At Caucasus Garden
Caucasus Garden's menu describes the soup dovga as "the Azerbaijani National meal." The warm yogurt soup is flavored with dill, garlic, and sorrel, and is enriched with eggs and rice. It's an unusual combination that gives great insight into an unfamiliar cuisine.

Old school dairy restaurant B&H serves some of the best comfort foods in the city, including soup with big hunks of freshly baked challah and butter. The mushroom barley soup is one of my favorites: thick with barley and flecked with carrots and dill.

The tofu & vegetable noodle soup at Tasty Hand Pulled Noodles features a vegetarian broth and some perfectly chewy noodles. The tofu (served on the side) adds some heartiness to the soup. Be sure to add some of the table-top condiments, like chopped cilantro and hot sauce.

At Naruto Ramen they have three different vegetarian broths, including the mild miso ramen. Packed with barely cooked veggies and perfectly cooked noodles, it's ready to top with a wide selection of condiments and sauces to punch up the flavor.
