Neuhaus recently introduced five chocolates as part of their new Precious Collection ($50 for a set of 20 chocolates). The pralines, smooth and glossy, are cut in the shapes of jewels with names to match. Jade is a tear-shaped milk chocolate with a honey and walnut ganache, while Pearle features coffee and dark chocolate. Divine is a half moon of soft caramel and hazelnuts enrobed in milk chocolate, and Rubis offers a double dose of silky dark chocolate. My favorite of the set? Glamour. Pictured above, it's the most complex and least sweet of the five. Dark chocolate shells harbor a caramel-colored filling of praliné à l'ancienne, a traditional, no nonsense praline. It's rough with ground hazelnuts and velvety with a texture akin to halvah. Pop a whole chocolate in your mouth and let it melt.
