Regardless of when you visit Balthazar Bakery, you will always find a Rustic Galette ($5.95) on the menu. The seasonal fruit toppings change often—think plums, berries, and peaches—but you can always count on that generously sized and supremely flaky tart. Well-browned, with layer upon layer of puff pastry, it's outfitted with a thick brush of nutty frangipane in which the ground almonds are more coarse than fine. They're currently using figs for the fruit, thinly sliced and caramelized after a run in the oven. It's finished with a rim of toasted almonds and fresh raspberries in the center, and the only thing that could make this better is an order of their hot ginger-citrus tea on the side.
