This Caramel Panna Cotta ($10) comes back on the menu every autumn at Otto. The toppings change (last year's version featured pears and brown butter crumble), but you can always count on diving into a deep bowl of supple, smooth and gently spiced panna cotta. The caramel is rich in that haunting, smoky sort of way, and it pairs perfectly with a serving of crème fraîche gelato. To complete, a spoonful of candied pistachios and sweet roasted figs comes on top as well.
