Silver Moon Bakery's soft, slightly sweet semolina bread cradles a more intense version of the tomato-basil-mozzarella combination we know and love. The tomatoes are dried and intensely sweet, the mozzarella is lightly smoked, and the basil is transformed into a pesto that's heavy on the olive oil (which soaks into the bread nicely).

That said, this sandwich ($6) was served to us fridge-cold, which dulled the mozz below the flavor we know it really has. Send it through your toaster oven for best results.
