Few places embrace just plain caramel anymore—it's always about the salted caramel nowadays. But at Il Laboratorio del Gelato, it's regular Caramel ($4.25/two-scoop small) that might be my all time favorite. It's an underrated flavor, with more unusual scoops (think mastic, wasabi, and sage) commanding all the attention. The caramel here is especially memorable because of the dark, nearly burnt caramel swirled into the buttery smooth gelato. These are not ordinary swirls, but rather generous pockets of liquid caramel that flow with each spoonful. Over the top decadent, and yet so simple. And don't forget...Il Laboratorio also makes a killer milkshake with this flavor.
