Sugar Rush: Butternut Squash Muffins at Cookshop
Your daily dose of something sweet.

This is a muffin, though to call it just a muffin is an understatement. Butternut squash provides the foundation for this creation by Amanda Cook, pastry chef of Cookshop (Amanda used to develop recipes for Krispy Kreme!). You'll find it at the restaurant's morning Coffeebar which is open from 8 a.m. to 11 a.m. daily, operated in a similar vein to the pastry counter of Locanda Verde (we need more pastry/breakfast bars like this in NYC).
Back to the muffin ($2.75): it has a sticky top with hearty, moist crumb. Slips of melty chocolate chips complete each bite. It's not a muffin with butternut squash, but more like a butternut squash turned into a muffin, spices and all. And that is a good thing.
