Behind the Scenes of Harold Dieterle's All-Sunflower Dish at Perilla

Top Chef Harold Dieterle is serving a seasonal vegetarian entrée at Perilla that we must admit we haven't seen anywhere else: a Tasting of Sunflower.

That's right, a sunflower. He incorporates five distinct parts of the sunflower into the dish: sunchokes (both raw and cooked), sunflower sprouts, seeds, petals, and the flower itself, which tastes like a sweeter artichoke heart.

This dish will only be available while sunflowers remain in season, so be sure to try this dish before the weather turns too cold.
