Poffertjes are the glamorous European sister to those mini Hong Kong hot cakes you can get from carts on Canal street. While the Chinatown ones run 10 pieces for $1, the ones from The Poffertjes Man down at the Fulton Street Market are 8 for $3 or 15 for $5. They're different though, very different. These have a distinct contrast between the decidedly crisp exterior, the crunchy edges, and a superb, fluffy and airy light interior. But you know what makes them extra addictive? The fact that they're topped with lashings of salted butter and powdered sugar. The butter melts quick, securing on the sugar and giving that sweet-salty balance no one can resist. Eat quick lest the butter soak though and turn the poffertjes soggy.
