Tips and tricks for making the best sandwiches at home.
Some sandwiches remind us of childhood—simple white bread, equally simple fillings, and not a vegetable in sight. Peanut Butter & Co. embraces this aesthetic, with many of their sandwiches tasting like school lunch...if your mom could make totally awesome peanut butter. The Mighty Maple ($6.50), a close cousin of The Elvis, forgoes the banana and adds some maple flavor instead.
Mighty Maple is one of PB&C's proprietary peanut butters, which mixes a bit of maple flavor into the familiar base. It's detectable, although the spread ultimately seems more like a particularly sweet peanut butter. The sandwich as a whole works nicely, though, with the sweet-salty interplay of the peanut butter and bacon. What makes it work for me is the toasted white bread—something I rarely enjoy with all the artisan buns and house-baked loaves in New York restaurants. Sometimes simplicity works wonders, and while this sandwich isn't breaking any new ground, it reminds us how tasty simplicity can be.
