Herring in a hot dog bun. It's a pretty common Dutch street food, and now you can get it at Russ & Daughters. The special treat (special if you, too, love the briny, buttery fishies) honors the return of new-catch Holland herring, which comes but once a year, for a short four to five weeks. In Holland, they celebrate the start of this herring season with a national holiday; at R&D, they're celebrating with this sandwich ($7.95) through August.

The whole, filleted herrings are mildly fishy, just pungent enough, and topped with chopped raw onions and wee cornichon slices. But the hot dog bun? The herring might feel more at home on a bagel on the LES, but the custom-baked buns from Hot Bread Kitchen are soft, challah-sweet, and have a little squish.
