Dickson's Farmstand Meats uses the real stuff to make its Slim Jakes and flavored jerky ($15 / half-pound). The former start with pastured-raised beef, which gets spiced and stuffed into lamb casings, then smoked for seven hours. The jerky has been cured with salt and pepper until it curls into a dark brown flavor nugget. It's nonstop chewy meatiness, with nary a unitard or legging in sight. Snap into 'em!
