Tips and tricks for making the best sandwiches at home.
The folks in the kitchen at Certé truly know how to create an out-of-the-box sandwich: not content to stick with your everyday sliced meats and cheeses, they opt to layer ingredients like citrus-marinated duck and slow-roasted lamb between bread. Their "Sandwich of the Month" offering allows them to experiment a little bit, as, hey, if a particular kooky sandwich doesn't sell so well, it's off the menu in a month, anyway.
In general, we've been nothing but fans of these selections, and April's torta, the Cuero de la Cocina ($8.95), is no exception. Tender, flavorful mole-spiced pork belly forms the backbone for the sandwich. It's topped with a cool, crunchy salad of shredded green cabbage and mango. Well, not too cool—watch out for the slivers of raw Anaheim chile, which provide a nice, sharp heat. The whole thing is toned down by a nice black bean purée. This is a torta dressed up for Midtown crowds that doesn't lose its verve under the nice suit.
