I first became aware of the pancake with egg ($1.75) from Henan Flavor (full review here) when Dave Cook over at Eating in Translation jokingly called it a "Egg McHenan". A Henanese egg sandwich? Man, I was there.
It looks like Dave's had a runny-middled egg, which ours certainly didn't. But either way, I find no fault with a fried egg set in a nearly greaseless, spongy griddled pancake, with a little soy to liven it up. Exciting? Nah, not particularly. But the pancake is well-made and I'd take the whole package over an egg-on-stale-roll any day. Reasonable size, reasonable cost, relatively healthy: a totally serviceable breakfast on the go. Particularly when it costs about as much as my bodega coffee.
