In case you weren't aware, April is National Grilled Cheese month, and here at Serious Eats, we're celebrating as we always do: both by cooking up our own cheese sandwiches and grabbing them from our favorite lunch spots. We were quite pleased with this one, the 'Cue Grilled Cheese ($11) from Fatty 'Cue's new lunch menu.
That same thick, buttery Texas toast last seen on 'Cue's Oyster Roll is called in again for this incredibly rich sandwich filled with oozy smoked mozzarella and Gruyere. If you're searching for Pelaccio's Malaysian influences, never fear: tucked away between the layers of cheese lurk sweet and spicy pickled red chiles. This is one grilled cheese we'd happily eat all month long.
