Sugar Rush: Truffles at Christian Vautier Le Concept

The newly opened Christian Vautier Le Concept offers housemade truffles in a colorful collection of flavors—just in time for Spring. Green is lime, yellow is passionfruit, and that cheerful pink number? Raspberry. Each starts with a supple fruit ganache, slightly tart with a clean finish. I like the lime the best for its clear, puckery notes, though the warming sweet finish of raspberry is no slouch either. The ganache gets coated in white chocolate and rolled in fluffy grated coconut. One is never enough, which is why they're sold by the bagful: 6 for $15, 12 for $30.
