Tips and tricks for making the best sandwiches at home.
There are three kinds of falafel at Chick-P on Bergen Street, and all three show up on the "Deluxe Sandwich" ($8). That's a spinach and mushroom falafel, a red pepper falafel, and a classic green herb-flecked green one. Plus the expected accompaniments: hummus, Israeli salad, pickles, and tahini, along with white and red cabbage and super-sweet, super-cooked-down eggplant.
Once that's all tossed in a pita, the differences in flavor aren't too prominent. Get a careful bite and they do become distinguished: the slight herbal bite of one, the slightly more substantial vegetable version, the flavor of the roasted red pepper. But all are well-textured, a little fried crunch before the loosely packed, steaming-hot innards. Doused in tahini and covered in hummus, they're all more than tasty enough to pass my "would I order this again?" test.
