When I read about Restaurante Culabre in Woodside on Joe DiStefano's World's Fare blog, I knew I had to head out to Queens and investigate. After all, who can resist their own curiosity about what DiStefano deemed a "Bolivian headcheese hoagie"?
What you're looking at here is not the dainty terrine you might find at Epicerie Boulud. No, the Sandwich de Enrollado ($6.50) contains a generous portion of inch-thick slabs of a rustic head cheese that's tender in some parts and chewy in others. We're talking very chewy. It's rounded out with soft carrots and crisp, lightly pickled onions. This sandwich is not for the faint of heart; you've got to be a head cheese lover to love this sandwich. But if that's the case, then love this sandwich you will.
