Eating a sandwich, in most cases, goes like this: pick up sandwich with hands; bite into sandwich with mouth. If you tackle the Pambazo ($6) at Tacos Xochimilco in this way, however, you'll end up with bright red fingers and a sauce-smeared nose. (They hand you fork and knife for a good reason.) The massive roll is smothered in a guajillo pepper sauce and then gets griddled, so some bits of sauce cook and crisp up; it's then layered with potatoes and beans, lettuce and avocado and queso fresco. Beans and potatoes mash together for a substantial and crazy-filling filling. It's sloppy and delightful even in this version, but I could imagine it'd be even more ridiculous with Xochimilco's chorizo; ah well, next time.
