Peanut Butter Parfaits ($7.25) are new to Bouchon Bakery and they're equal parts whimsy and indulgence. It's the fresh strawberry compote layered in at the very bottom and a trio of fresh strawberries at the top that tie this all together. In between, layers upon layers of a vanilla bean sponge genoise, a silky peanut butter mousse with a thick, intense texture that borders on that of ganache, and a cloud of milky-sweet fresh whipped cream. Whole toasted peanuts and a buttery crumble make for a little play in texture. It's the sort of dessert that might be served in layers but is best enjoyed with a little of everything in each bite.
