The namesake sandwich at Tribeca's Pane e Panelle—chickpea fritters and cheese—really is a classic worth building a reputation on. But a number of their sandwiches are variations on that theme, like the "Melanzane e Panelle" ($9). Here, the chickpeas pair up with fried eggplant for a double layer of crisp-edged, soft-middled fritters, along with a slice of mortadella, pecorino, and just enough tomato sauce to seep into the bread and flavor the whole thing. It's got all the elements of a sloppy sandwich, salty and cheesy and fried, but restrained and pulled together on a tidy little bun.
