The sandwich menu at Lunchbox Brooklyn in Greenpoint reads like a Vermont high school yearbook: Clarke, Fox, Johnson, Richardson, Smith, Taylor, Wilson. There is a Jones, of course, but it's not bologna on Wonder bread. Instead, you get slices of beets and green apple, walnuts, goat cheese, vinegar, olive oil, and sea salt on a baguette from Balthazar. The beets impart a slight graininess, but the creamy/crunchy contrast of the goat cheese and the walnuts and apple slices leaves the most lasting impression. We could use more salt--getting some flecks of it with the fruit makes for a snappy bite--but what would the neighbors think?
