At Kin Shop, the Turkey Burger ($13) is served only at lunch; the words "turkey burger" don't usually catch my eye on any menu, but this one stands out for a number of reasons. First is the burger bun, which is housemade with Sriracha; it colors the bun a slightly orange shade, the sweet-spicy heat coming though subtly. It's topped with sesame seeds, split and toasted, and it's an ideal pairing for the spiced and unexpectedly moist ground turkey patty, blended with chili jam. The patty's topped with a smear of nutty yellow bean aioli (good enough to bottle and sell on its own as a condiment!) and crisp, crumbled fried taro root. Butter lettuce and pickled red onions complete the sandwich. It comes with a side of preserved greens, served cool with a bit of pepper tangled in. Not spicy, but there's enough heat to make you pause for second. Certainly not your ordinary turkey burger; but it's excellent all around.
