While there are any number of Grilled Veggie and Hummus ($8) sandwiches out there, the version we tried at Brooklyn's Perch Cafe is a lot more interesting than most. Their reasonably creamy, well-balanced hummus and an olive tapanade line the insides of a spongy, deliciously oily and well-salted rosemary focaccia that's baked in house. While the tomatoes weren't great, piles of grilled squash and mesclun make up most of the sandwich innards; and really, this sandwich is all about the hummus and olive oil-y bread.
