Tips and tricks for making the best sandwiches at home.
I can't decide which I like more: the housemade spiced chips that accompany Seersucker's Catfish Po'boy or the sandwich itself. The chips are sliced paper-thin, a consistent crunch dusted in a very addictive "secret" mix that, I'd guess, contains a loving dose of paprika. And the sandwich itself? Shredded lettuce and aioli on a toasted bun, served open-face to highlight the cornmeal-battered catfish. Consistently fresh and never the least bit muddy in flavor, the catfish is fried to a healthy crisp and delivered hot to the table. There's a little salad on the side if you must be healthy, but I'll trade that in for more chips next time around. All this for for $10? It's a sandwich I can get behind.
