Sometimes they're topped with chocolate, other times with a crisp shatter of caramel. Often they're filled with vanilla pastry cream, but on other occasions you can score caramel or chocolate cream. Regardless of the combination, Mini Profiteroles at Balthazar Bakery are an excellent bet for when afternoon sugar cravings roll around. They're sold in sets of three for $5.50, each choux pastry round piped tight with the chilled cream. A mellow caramel pastry cream with a caramel top (pictured above) is a particular favorite, but I wouldn't refuse any of the other combinations.
