The Tuna & Fennel Salad with provolone cheese melt and caper dressing ($7.95) sounds, in theory, like a fancy-pants tuna melt studded with a few capers to be different. This is not true. In fact, the predominant flavor in this lovely light sandwich is lemon, providing a zing of citrus freshness rarely found in things involving both tuna and cheese. The tuna is mixed up with bits of red onion, celery, and slivers of fennel, allowing the fish to flake naturally into delectable little shreds. A melted disk of provolone keeps the salad anchored inside its bread, allowing the tuna salad to be freed from the gluey necessity of mayonnaise. This is an unusual sandwich, and a strong start for such a new sandwich shop. In fact, the only glitch noticeable at this little Union Square shop is the menu, where sandwich breads include both the "cibatta," "foccacia," and a "whole weat baguette."
