The Muffaletta ($10) at Fort Defiance defies normal sandwich proportions. As far as sandwich topography goes, the Muffaletta has got satisfying layers of Emmental and provolone above soppresata and nicely marbled coppa. But the dominating factor of this lunch meat landscape is the bread—a voluminous wedge from the Artisinal Bakers Group. I'm as into bread as any non-Atkins eater, but facing this cliff-faced sandwich made me feel like James Franco in the latest rock climbing movie. The office New Orleans aficionados wished that there was more olive salad, and more olive oil, to properly soak through the loaf. Still, it's tasty. Go for this sandwich if you want a muffaletta with none of the grease and double the bread.
