The components of a good tuna melt are reasonably straightforward: super-buttered and throughly griddled bread, melty cheese, and tuna salad that's creamy and somewhat smooth without being a total mayo bomb. On all counts, the tuna melt from Eisenberg's Sandwich Shop succeeds wildly. An old-school favorite from an old-school lunch counter.
