The strawberry Panna Cotta ($7) at Bouchon Bakery comes dotted with an abundance of vanilla beans, fragrant and melting into a bottom lining of fresh strawberry preserves, more fruity than sweet. At top, another layer of jam, a duo of macerated strawberries and a handful of cake crumbs for textural contrast and a bit of crunch. The panna cotta is quite pudding-like, and would not hold shape if it were removed from the container; whether that is for better or worse is solely dependent on personal preferences.
