The Icebox Cake ($4.75) at Billy's Bakery—there are chocolate cream versions, and peppermint ones too. But the original remains the best. Perhaps one of the easiest desserts to recreate at home, the cake's popularity at bakeries such as Billy's, Magnolia's, and Buttercup Bakery is somewhat remarkable. All three taste fairly similar, but if asked to pick one, I'd favor Billy's Bakery over the rest, for consistency in quality alone. Alternating layers of chocolate wafer cookies and sweetened whipped cream, piled 'til they've amassed a tidy tower. The cakes sit overnight until the crunchy wafers get all soft and cake-like. Stick your fork in, and dive straight down—or peel off the wafers, layer by layer, for fluffy cream-laced bites of chocolate goodness.
