Mix It Up: King's Town Punch at Quarter Bar

Upon first glance, Quarter Bar in Windsor Terrace looks very much like a brew pub, with artfully battered wooden tables and a somewhat rustic feel. But look closely, and you'll find a handful of wines being offered by the glass, a pretty oasis of a backyard garden, and a thoughtful selection of unique cocktails.

David Moo changes his list a few times per year, and the night we visited, the torrential rain seemed to steer us towards drinks reminiscent of sunnier summer evenings. After glancing at the Chili Lime, a vodka-based drink spiked with a Serrano chili and hot sauce, and the Rita Lee, a margarita flavored with salted plum powder and garnished with a jaunty umbrella, I settled on the Kings Town Punch.

Unlike some rum punches, this isn't an super-sweet fruit bomb—the main flavor note, beyond the rum and lime juice, comes from a subtly floral house-made hibiscus iced tea and artisanal bitters. I can only imagine that it would have tasted even better sitting in the garden. Perhaps I'll check the weather before my next visit.

King's Town Punch

3/4 ounce Gosling's Black Seal Rum 1 ounce gold rum 1/4 ounce fresh lime juice 1 barspoon simple syrup 1 short dash Fee Brothers Whiskey Barrel Aged Bitters 1 short dash A.B. Smeby Hibiscus Rose Bitters Agua de Jamaica* Candied ginger and lime wedge for garnish

Build in a highball glass with ice. Add Agua de Jamaica to fill. Garnish with a skewer of candied ginger and a lime wedge.

*Agua de Jamaica

2 ounces Jamaica flowers (dried hibiscus; available at Kalustyan's) 4 cups water 1/2 cup sugar 1/4 inch disc fresh ginger, grated 1 ounce fresh lime juice

Boil water with ginger; remove from heat. Add flowers and sugar, steep 15 minutes, then strain. Add lime juice, then cool.
