If a shop serves only fries, they better be damn good fries. Proving that specialization is the way to go, Pommes Frites sells exactly what it advertises: delicious, thick-cut Belgian fries served in paper cones. Fries emerge from their hot oil bath crisp on the outside, fluffy on the inside, and sporting some serious potato flavor. The variety comes from uniquely flavored mayos and curry-scented ketchups to dunk your fries in—and they do samples.

We liked: curry ketchup especial, sweet pomegranate teriyaki mayo, and silky smoked eggplant mayo. But fancy dips aside, these frites showed some serious staying power when they proved good cold. And that's a hard feat for a fried potato to pull off.
