Good fries reliably hit our most basic cravings. db Bistro Moderne's version do just that, arriving skinny and well-salted, crisply piled high in a silver cone. A trio of sauces lends a flourish of mayo whose silky baseline hums with horseradish, a spicy dijon mustard, and of course, ketchup.
