Hudson Valley Duck Farm is at the Union Square Greenmarket on Mondays. They can also be found at the Fort Greene, Tribeca, Tucker Square and Inwood Greenmarkets on Saturdays and at the Columbia and Caroll Gardens Greenmarkets on Sundays. Stop by for a sample of their duck charcuterie offerings!
The Lola breed ($6.50/lb) is a smaller and gamier bird available from Hudson Valley. The other breed that Hudson Valley sells is called the Moulard ($5.25/lb), which is a bigger bird that is more traditional.
Hudson Valley also sells its duck broken down in parts, like the Lola breast pictured here ($10.50/lb for Lola or Moulard).
Here is one of the products that Igoe gets most excited about: "Rillettes are basically duck breast meat with fat removed, slow cooked, shredded, we put the broth and fat back in again and make a pate out of it. Awesome on top of a toasted baguette, with a little tomato, arugula, cracked pepper, a cold pint on the side, soccer game on TV..." At this point Igoe trailed off, presumably lost in his happy place.
