At Jean-Georges Vongerichten's new locavore-friendly ABC Kitchen, you could make a memorable meal of far more virtuous vegetables: cumin-roasted carrots, roasted beets, memorably sweet sugar-snap peas. But don't overlook the fries. A pile of classic frites, kicked up with crisp fried parsley, tender fries with tons of salt and bits of crunch.
