Combine soft-cooked eggs, cheese, bread, and tomato sauce in any combination and you usually have a winning dish. Do it as Belcourt does, and it's a revelation. Their pani frattau ($10) starts with music paper bread—a thin cracker-like concoction that becomes pliable when warm. Supposedly, it was a staple for Sardinian shepherds who'd carry it on their backs as they roamed, letting the sun warm it and make it more delicious. In between, fresh tomato sauce, basil chiffonade, homemade ricotta (a marvel in itself), and crème fraiche come together to form a creamy explosion of flavor. On top of the pile go two perfect, golden-yellow yolks nestled in just-set whites and a generous shaving of Parmesan. Get it all together in one bite, and you might not ever want to brunch on anything else again.
Word to the wise: come hungry. Belcourt may not be known for its whopping biscuits (yet), but when topped with more of that sweet, wonderful ricotta, honey, and jam, they taste every bit as delicious as they look ($7).
