Prosciutto and mozzarella has long been a favorite sandwich combo of mine, but after trying the Prosciutto and Mascarpone ($6.95), or #2, from Bottino in Chelsea, I'm inclined to switch my loyalties. A fair few slices of prosciutto di Parma are layered with tomato, oil-dressed basil and arugula, and a generous smear of the soft, slightly tangy cheese—great on a just-crunchy baguette, but perhaps better (and bigger) on rosemary focaccia.
