Many-layered cakes are one of my favorite things to look at. And eat, of course. Lady M's Mille Crepe, the assortment of Icebox Cakesfrom Billy's Bakery—and now, Grandaisy Bakery's Coconut & Dulce de Leche Cake ($4). Spelt wafers are smothered with housemade dulce de leche and topped with a handful of toasted coconut. Repeat, repeat for seven layers. Let the "cake" sit overnight for the wafers to soften; slice and serve.
The nutty and hearty spelt wafers were the best component; I'd buy these plain by the disc if they were for sale. Each slice makes for a pretty big helping, and while the first bite might not seem too sweet, by the end of the cut you're bound to be in dulce de leche overload. This is one for sharing—rich and lovely in small doses, with a cup of tea on the side.
