And this morning, I finally spotted one worth writing about at Colson Patisserie in Brooklyn's Park Slope. Delicate croissant dough with a scant sprinkle of cinnamon-sugar, spiral-rolled and baked into a muffin tin for a crunchy, airy top and a denser, compressed base. Look for the "morning roll" on the menu.
