'All About Pork' at ICE
Saturday, October 10, 6 to 10 p.m., $110 This class will make you switch from chicken to pork as your go-to meat when you don't know what else to make. Enjoy cooking all the delicious final products of the pig, including pork chili, meatloaf, burgers, pork loin with citrus glaze, brussels sprouts with bacon, and other side dishes like butternut squash purée and dried fruit with cider sauce.

'Global Kitchen: The Magic of Pickling' at the American Museum of Natural History
Tuesday, October 13, 6:30 to 8:30 p.m., $20 Author and historian Lucy Norris will join pickler Bob McClure to talk about the history of and culture surrounding pickles. A pickle tasting will be included in the festivities.

'Culinary Identities of the American Heartland' at Park Avenue United Methodist Church
Wednesday, October 14, 6:30 p.m. to 8 p.m., $40 International food historian Bruce Kraig will show that Midwestern cuisine has as much of an identity as South and the Northeast--complete with pie, casseroles, and more (the full title of the class suggests fish boils, fish fries, Cudighi and Runza, Ohio mango, the Coney, and Big Baby).
